Kielbasa, Onions & Buttered Noodles

Another pantry scrounge that turned out pretty good.

Ingredients:
1 pkg. kielbasa sliced into 1/4 inch thick rounds
1 pkg. extra wide egg noodles
1/4 C butter
2 large onions caramelized in 2T oil & 2 T butter

Directions:
Slice onions and begin carmelizing (takes 45-60 min.). While the onions are cooking slice the kielbasa. When onions are caramelized move them to a small bowl and cover, add kielbasa to the onion pan and saute. While kielbasa is heating boil the noodles according to package directions. When noodles are done, drain, stir in butter. When butter is melted add onions and kielbasa, mix well. Serve.

Chicken, Brown Rice & Beans

This was a pantry scrounge but it turned out to be super quick, easy, yummy and healthy!
This is going into our regular meal rotation.

Ingredients:
3 C Minute brown rice prepared according to directions but using chicken broth in place of water
3 cans chunk chicken, drained
2 cans black beans, drained
1 C salsa
1 small can green chilis
3 C frozen corn

Directions:

In large microwave safe casserole dish mix chicken, beans, salsa, chilis and corn. Microwave until hot. Add rice to chicken mixture in casserole dish and mix well. Serve.

Oriental Dressing

*Make the night before for best taste!

Ingredients:
3 tablespoons Honey
1 1/2 tablespoons Rice Wine Vinegar
1/4 cup Mayonnaise
1 teaspoon Dijon Mustard
1/8 teaspoon Sesame Oil

Directions:
Whisk ingredients together in a small bowl and refrigerate overnight.
